Canestrato is a pecorino matured by Casa Madaio. It has a brown, scored rind; inside the cheese is pale yellow. The curd appears compact and homogeneous. The very strong aromas of milk and grass in medium mature cheesees and of dry hay and roasted hazelnuts of the more mature cheeses are typical of Pecorino cheese.
It's made with milk from small stock farms with pastures in Basilicata. The shape of the Pecorino depends on the drip tank. In fact the creativity of the dairymen reaches its heights with this artisan technique. The cheese is matured for 12 to 18 months.
