The product-range includes fresh, semi-mature and mature cheeses, in order to optimize the production and storage process. Every stages of the cheese's life can be followed with care, nothing is left to the fate.

The company is designed in order to meet the personality and the needs of every cheese, the time provides better experience to all wheels, but it is needed passion and vocation in order to let evolve every cheese without flaws or defects.


The milk is first processed in Eboli, where fresh cheeses are packaged and delivered to customers, the rest of the production is intended for aging. The wheels are turned by hand every morning and “dressed” with aromatic herbs, olive oil or vinegar.

When the cheese is mature enough to withstand the temperature of the caves, it is moved to Castelcivita, where it spends the rest of his life, from the mountain it gains the strength and wisdom of the wise hermit.
