Casa Madaio's Rosso originates from the union of two cultivating traditions that are linked to agricultural regions in Italy: pecorino milk from the countryside of the campania region, and the istantly recognizable Senise peppers from the Basilicata region.

Casa madaio meticulously covers the sweet and creamy pecorino cheese with a light coating of powdered Senise peppers.

The special treatment and seasoning causes a light redish-orange crust to develop on the cheese, thus inspiring the name "Rosso".
