Since four generations, Madaio Family hands down, from father to son, wisdom, knowledge and values born from the respect for nature. And it’s from the love for traditions that their cheeses are born.

Between the smell of lemon trees and the unspoiled green made of olive trees and chestnut woods, here grow the animal farms of Casa Madaio. They call it the” Garden of Europe”, this small branch of land where the company is located, this land between two of the most beautiful coast in Italy : from the green hills of Cilento to the cliffs of the amalfitan Coast.

The Animal Farms of Casa Madaio live in freedom in their natural habitat.

The animal wellness is essential to preserve the unique and inimitable taste of the milk,

that gives to every product an authentic personality.

TIME AND THE PERFECT SEASONING

The milk freshly collected is transformed into cheeses directly on the mountains a transferred during the same day in the laboratory in Eboli.

Cheeses that requires more time for seasoning are transferred to Castelcivita.

Here the wheels are treated with care and devotion by expert hands: every morning the wheels are cleaned and covered with a “concia” a mix of olive’s oil and vinegar.

The oil used for this phase is produced following the old traditions too, so to grant to our cheeses the taste and the inimitable aroma.

From Eboli, all our cheeses leave, first of all, the delicious buffalo mozzarella from Campania and the Teneri, in order to reach our customers all over the world.
