Teneri is the buffalo ricotta of Casa Madaio. The high biological value of the whey proteins make this product ideal for children and adults, it’s the most precious ingredient of the italian culinary tradition and of the Meditarranean diet.
Tenerì presents itself with a pearl white color with an intense smell of cooked milk and a small scent of walnut.
The taste is delicate.
The consistency is fine and slightly adhesive.
The milk’s fresh whey ,obtained from the production of mozzarella, is added to heated buffalo’s milk. The ricotta is then collected in sieves. Ricotta is obtained by heating the whey. From here the word ricotta, from the italian “cooked twice”, to mark this double process. Teneri is available in different dimension in a modified atmospehere.
