Sheep’s milk

From the careful selection and long wait that ranges from a minimum of 24 to a maximum of 36 months of aging in the natural caves of Casa Madaio is born the Calcagno Gran Reserve.
A pecorino with rare eyes and a thin rind tending to amber with a decidedly medium taste, it has an aftertaste of butter and toasted hazelnuts.

The complex aroma is the result of the balance between numerous volatile components distilled from the sheep along hill pastures, rock and sea.
Ideal accompanied by an excellent full-bodied red glass.
