Sheep’s milk

Mastorazio is a pecorino seasoned from Casa Madaio that owes its peculiarity to the environmental characteristics of the Castelcivita seasoning caves. It has a brown crust; the color of the internal paste is straw yellow, with a compact and homogeneous structure. The structure is compact and homogeneous.

The smell is very intense, of dry straw and toasted hazelnuts in the more seasoned ones, with a intense taste.
The milk used comes from small grazing farms. The cheese is aged for 6 to 12 months.
