Each cheese tells the story of Casa Madaio, through its aroma and its shape. The Sfogliato is a cow’s milk cheese, aged for at least two months, it is branded with fire and matured with hemp rope. The pasta is white or slightly straw-colored, it has a homogeneous,
compact appearance, which becomes peeled as it matures. The product has a strong taste with a flavor of chestnut and slightly musky. The fresh pasta is formed by hand obtaining the typical pear shape with head.
