The Barilotto provides a new version of the traditional, salted ricotta and it is unexpectedly well balanced. It has a sharp taste and aroma and although it melts in the mouth, it’s slightly granular on the palate. Barilotto is fresh ricotta, which loses gradually its humidity, after 8 days of its production it is covered with salt and aged at least 40 days.
During the maturing process, the cheeses are turned 45 degrees, according to the classic method of making sparkling wine. The product has a weight of about 500g or 140g.
