Few cheeses are able to evoke the sweetness and harshness of the Mediterranean seasons as Calcagno does. Sheep are frugal, parsimonious creatures which distils the hills, rocks and sea into a milk which the cheese maker turns into a Pecorino cheese of about 16 kg. The maturing process lasts from 4 to 36 months. Best served grated on pasta or as an appetizer. It is a cheese for snacking on its own or with crackers. It is used for flavoring dishes, such as soup and sauce recipes. It can be accompanied by a young red wine or a dry white wine.
