Mastorazio is a mature Pecorino which owes its special characteristics to the particular microclimate of the caves in Castelcivita where the cheese is matured. It has a brown rind; inside the cheese is pale yellow. The very strong scent of milk, dry hay and roasted hazelnuts is typical of more mature cheeses. It is made with milk from small pasturage farms. The cheese is matured from six to twelve months.
