Casa Madaio’s Rosso originates from the union of two ingredients: the fresh sheep milk and the instantly recognizable Senise peppers. Casa Madaio meticulously covers the sweet pecorino cheese with a light coating of powdered Senise peppers afterwards carefully storing them within unique seasoning chambers for a period of at least four months. This special treatment and seasoning produces a light radish-orange crust on the cheese, thus inspiring the name “Rosso”. As with the cheese’s unique color, its flavor is also unmistakable due to a decidedly grassy aroma and delicate scent of peppers, which comes together into a truly harmonious Mediterranean bouquet.
